Remember the white roll and chips I ate yesterday? Well guess what… I’m still alive today. My pants still fit, I didn’t blow up like a balloon, and I felt just fine. Because you know what? Orange! Or sea foam green. Don’t make me choose…

Tigers. a) They’re part of the cat family and b) they’re flipping adorable.

Does kombucha count? There’s a like .00000001% alcohol but it’s so delicious. But iced green tea would be the next choice.

Facebook! I don’t go on Twitter everyday, but I most definitely go on Facebook errday.

5. What is your favorite pattern?
Probably my phone cover. Then again, it can easily change if the colors are good.

6. Do you prefer getting or giving presents?
Giving for sure. It’s even better when you get the person a super awesome gift that you know they will love.

7. What is your favorite number?
31. It was my number playing basketball in high school and my birthday is on March 31. So now, I basically end everything in 31. Because it’s amazing. And the best number. Ever.

8. What is your favorite day of the week?
I’m honestly not sure. Probably Friday or even Monday. It’s definitely not Saturday, which seems weird, but it’s true.

9. What is your favorite flower?
Orchids. My mom bought a plant at Costco like 5 years ago and every spring, it blooms. Who knows how long it will last for, but I love it!

10. What’s your passion?
Health, fitness, body confidence, eating disorder awareness, and helping people.

Another week has come and gone! That means it’s time for yet another WIAW 🙂

I planned on going to the gym early with my sister but when I was laying in bed and didn’t hear her wake up, I decided to just lay my head back on my pillow. Good decision for sure.

I had work today so lunch was eaten there. I had time to eat an actual meal so I took this time to enjoy some of the oh so delicious food I drool over all day.

This is definitely one of my all time favorite dishes that we serve. My goal is to recreate it. But that maple orange dressing is just so dang good!


Boogie Bar

This is called a Boogie Bar at work but it’s basically banana bread with almonds, coconut, and chocolate chips. Again, one of my favorites.

I worked out with my friend and took an Athletic Training class like last week followed by some bicep/back work. I wasn’t sure what she was going to think of the class, but as it turned out, she loved it! She thought the instructor was amazing as well and loved how challenging it was. It’s a go back fo sho!


Roll before dinner

I was really hungry by the time dinner rolled around so I did something I never thought I would do. I ate a roll. A roll with white bread. But the night didn’t end there…

That’s right…chips. And I ate them. They make these fresh at the restaurant so I figured if I were to eat a potato chip, it would be better to eat homemade ones. When the plate was sat in front of me, I grabbed a chip, turned to my mom, and slipped it into my mouth, with a smile on my face. She said, “No way!” I could see how happy she was that I was letting loose and, to be honest, they tasted pretty darn good. I shared a few but besides that, I ate them all. All by myself 🙂

To be honest, I don’t really regret eating them or the roll. I’ve loosened up so much on my eating that it felt nice not to order a salad without the dressing. The salad section was actually the last part I looked at. I left the restaurant with a smile on my face for the progress I have made. I was able to enjoy the company and not think about the chips I just ate. I just…lived.

my most recent realization

Heyyo everybody! Hope you all had an amazing weekend, whether it was a long one or not. We had a BBQ at my aunt and uncle’s camp site which was nearby. There is nothing I love more than spending time with family, but this time was different. Between this past year and my new job, I have grown up so much. First, freshman year taught me a lot about myself and how far I’ve come. Second, I am constantly talking at my job so it just carries over to home or wherever. I had a really fun time talking to my grandpa, step grandma, cousins, aunts, and uncles. And you know what? I wasn’t constantly thinking about food. I was simply enjoying my time with the people around me. Big changes right there!

But that isn’t my most recent realization that I’m talking about in the title. Yeah it’s a realization and a change, but I had another one.

I went on a run the other day and….uhhhh…it sucked. It was only 3 miles but I was constantly looking at my Garmin to see what my pace was. If I even got above 7:59, I would get mad at myself. And anything in the 9 minute, I would basically give up, mentally. I came home from that run defeated. I plugged my Garmin into my computer and cringed at the time I saw.

I decided to go on another run on Saturday. But this one was different. I told myself to only look at my watch every once in awhile. And if I was running a 8:00 min/mile or 9:00 min/mile or even 10:00 min/mile…who cares.

I run for me.
I run because I like the high.
I run for the alone time.
I run because I have too many running shorts.

Okay so maybe not the last one (sort of), but the main thing is: I run for me, myself, and I.

For my run on Saturday, I flipped my Garmin around so that the screen was on my wrist. That way, it would be harder to look at the time. I took it easy. And I liked it. Really and truly liked it! I would rather run 6 happy, relaxed miles than 3 unhappy, disappointed miles.

I did run the half marathon today, and I went in with that exact mentality. I didn’t care about time or pace. I just went with the flow.

I’ll post a recap on the race later but to sum it up, my time wasn’t great. But you know what, who cares?? I don’t. And I’m okay with that 🙂

random ramblings

1. Aye aye aye! Life lately has been busy. Busy in a good way though! I have worked everyday this week after picking up an extra shift. And besides that, I have also been continuing to train my friends. But I wouldn’t change it for anything 🙂 I would rather be on the go rather than sitting on my butt, bored out of my mind. The worst part of it all is that I’m behind on my episodes of Dr. Phil, Cupcake Champions, and Next Food Network’s Star. Now this, is a problem.

2. Speaking of TV shows, did anybody watch the series finale of House?? I know some people were disappointed, but I loved it. I may or may not have cried a little…

3. Guess who came into my work the other day… Jorge Garcias! a.k.a. Hurley from Lost. a.k.a. Dr. Soto from Alcatraz, which got cancelled. How dare they. On the outside, I had to stay cool, calm, and collected, but on the inside I was totally freaking out while I was taking his order.

4. My mom flew up to Portland to help my sister pack up her dorm and move home. So that left my dad and I. What did we do, you ask? We went to the Whole Foods hot bar for dinner. He knows me well.

5. Since I have been so busy lately, my blog commenting has been way down. So if I’m not commenting, don’t be offended! I’m still reading 🙂

6. I went to breakfast with one of my best friends the other day at one of my favorite places. It’s at the harbor so the view and atmosphere is great. Not only that, but the food isn’t half bad. I got the Power Pancake Crunch which is “power” pancakes, greek yogurt, granola, strawberries, banana, and a drizzle of honey. Delicious. I also got some honey ginseng green tea. Yeah, that’s perfection right thurrr.

7. And lastly, I may or may not be running a half marathon on Monday… We’ll see.

What shows have you been loving lately?

savory blue cornmeal pancakes

I’m pretty sure 75% of the recipes I’ve shared are pancakes and 95% are carb related. But cards are delicious, so your argument is invalid.

But back to the goods. My first time in Portland, I went to Byways Cafe and they had the best blue cornmeal pancakes. The best. Once again, your argument is invalid. I’ve been meaning to recreate the recipe for so long but have never gotten around to it. But since I’m on my pancake kick, I decided to change it up and go with a savory version. I had some avocados, salsa, a lone egg, and a hankering for pancakes (shocker). Plus it’s blue…and blue is the best color. You guessed it: your argument is invalid.

Savory Blue Cornmeal Pancakes
Serves 1

  • 1/2c blue cornmeal (regular cornmeal works too)
  • 2Tbsp wheat bran (more cornmeal works)
  • 1/8tsp salt
  • 1/2tsp baking powder
  • 1 flax egg (1Tbsp ground flax seeds + 3Tbsp warm water)
  • 1/2c milk
  • sweetener (I used 7 drops of stevia but agave, maple syrup, and honey would work)
  • toppings: If you want it to be savory, I recommend a fried egg, salsa, and/or avocado. But if you want a sweeter version, maple syrup works too! That’s what I used at Byways and it was uhhmazing.
  1. Make the flax egg and let sit until it forms a gel. Set aside.
  2. In a medium bowl, combine the cornmeal, bran, salt, and baking powder.
  3. Now add the flax egg, milk, and sweetener.
  4. Heat a skillet to medium heat and once hot enough, pour the batter into the pan.
  5. When you see bubbles form in the batter, flip.
  6. Cook for about a minute on the other side.
  7. Stack the pancakes up and layer with toppings!
And now I leave you with this video of my cat. Does anybody else’s cat do this? Whenever she sees a bird, she goes into total stealth mode and makes this meow/goat like noice. It’s weird. But I love it.

a working girl’s WIAW

Happy WIAW everyone! Hope you all have had a great start to the week. This week’s WIAW is based off of my day at work. So I’ll give you guys an update on the new job too 😀


Banana pecan protein buckwheat pancakes, maple syrup, and green tea

This morning’s pancakes weren’t as pretty as last week’s but they were still delicious! I didn’t measure the ingredients, but they included a combination like:

-1/3c pancake mix
-3/4 scoop chocolate protein powder
-1Tbsp raw protein powder
-1/2tsp baking soda
-3Tbsp coconut flour
-dash of cinnamon
-1/2tsp vanilla extract
-2 egg whites
-about 1/2c almond milk
-1 ripe banana
-1/4c pecans

After breakfast, it was time for work! So far, I have been loving it. The people I work with are super nice and we all get along so well. Plus, I love talking to the customers and helping them. Compared to my other past jobs where I dreaded going into work, I actually enjoy when I have a shift! Plus, the food is awesome so that doesn’t hurt either 😉

No lunch for me today. So sad, too bad. I did get a break while on work though so I had an apple and protein bar. Then it was back to work!

After another amazing day at work, I came home hungryyy.

Banana, pb, and chocolate vanilla granola

Looks like dessert, tasted like dessert. I was a happy girl.

After I let this snack sit for a bit, I hit the gym! I changed it up a bit and road my bike rather than drive. Turned out to be an amazing decision. I took a more bike friendly route and it took 2.2 miles and 10 minutes to get there. Way faster than driving with all the in town traffic! I have found my new source of transportation 🙂

At the gym, I did a bicep/back workout and then joined in on an Athletic Training class. If you have a 24 Hour Fitness pass, go to the Athletic Training class! It was so much fun and a real workout. Loved it! Plus the instructor reminded me of Jillian Michaels. Wha wha??


Kale, red pepper, and tofu swiss chard wraps with salsa, avocado, and cabbage, brussels sprouts on the side, and a glass of iced green tea lavender lemonade

The wraps were super simple to make! All I did was saute some kale and red peppers in a bit of olive oil. With the tofu, I baked it in the oven with some of this spice:

my kind of day

I love lists so I’ll just give you guys a run down of my day in list form. Sound good? Good.

  • Woke up on my own free will. 10 hours of sleep, don’t mind if I do.
  • Ate breakfast.

Greek yogurt, chocolate Amazing Grass, flax seeds, chia seeds, frozen berries, and granola

  • Got caught up on Community. It was the season finale. So sad, too bad.
  • Went to church.
  • Went to Whole Foods! Since opening (which was Wednesday), I have been there 3 times. #noregretz. We met up with my aunt and got lunch at the hot food bar. That place is still complete madness! But I was able to get my food without being trampled.

Let’s see if I can remember everything. Half of a spinach and brown rice patty, cabbage slaw, walnuts, pumpkin wheat berry salad, southwestern quinoa salad, tempeh salad, roasted mushrooms, beet salad, hummus, radishes, cucumber, cauliflower, and a Botonical No. 9 kombucha.

  • Shopped at Whole Foods. We picked up some goods for dinner and the rest of the week 🙂
  • Did an awesome leg workout with my friend. I have a feeling she won’t be able to walk tomorrow…
  • Made protein bars with my friend. She is seriously one of the most picky people I know so I am trying to make healthy stuff that she will actually like. These bars were a success! She even tried chia seeds and said they weren’t bad. Baby steps! 
  • Tested this dish out for my next nutrition class. I don’t think I’ve even mentioned the nutrition class so I’ll save that for another post. But basically, I go to the senior citizen center and teach them about healthy food. I also bring in some dishes for them to try. Next class is on fruit so if you have any recipes, give me a shout!
  • Took my favoritest boy ever on a walk. He’s such an old man…and I love it.
  • I am now currently watching the Clippers game. Let’s go Blake!

honey lavender scones

Oh scones. I love ’em. But not the whole butter thing. Butter still freaks me out. I really don’t know why, but it’s still a food I struggle with. I’ll try and conquer it one day, but that day wasn’t today. Today, I made scones without butter. Sub in some greek yogurt and it’s just as good (in my opinion). Since going to Seattle and buying lavender, I’ve been trying to use the goods sparingly. First came lavender lemonade and now these scones. Both quite delicious.

These scones are light, crumbly, and healthy (not much of a shock there). I originally saw the recipe for scones on Oh She Glows and made them like, the next day. I made a few variations: pumpkin, banana nut, and now honey lavender. Okay enough talk, here’s the recipe.

Honey Lavender Scones (makes 8)
adapted from here

  • 1c buckwheat flour
  • 1c oat bran (or oat flour)
  • 1/2tsp salt
  • 2tsp baking powder
  • 1/2tsp baking soda
  • 1Tbsp culinary lavender
  • 1/4c olive oil
  • 1/4c honey
  • 1/4c plain greek yogurt
  • 3Tbsp almond milk
  • 1tsp vanilla extract
  1. Preheat the oven to 375 degrees and line a baking sheet with parchment paper.
  2. In a large bowl, combine the buckwheat flour, oat bran/flour, salt, baking powder, baking soda, and lavender.
  3. Add the olive oil and mix until crumbly (it’s easiest to mix with your hands).
  4. Add the honey, yogurt, almond milk, and vanilla and mix it on up.
  5. Spoon the batter onto the baking sheet and bake for 15-20 minutes at 375 degrees.
Now go make these. And if you don’t have lavender, go buy a lavender plant. That’s my next move…
What’s your favorite kind of scone?

So if you’re new around these parts, let me bring you up to speed. I’m a huge Jillian Michaels fan, I love fitness, I love eating healthy, and my family and friends are the most important things in my life.

If I could have one wish, it would probably to have a job like her. She has inspired so many people to get healthy. When my sister first stared losing weight about 5 years ago, she bought a Jillian Michaels book and listened to her on the radio. I really didn’t think much of it. I actually had to ask, Who’s Jillian Michaels? I know, I can’t believe it. But then I grew up, got into healthy living and fitness, and knew exactly who Jillian Michael was.

As I mentioned the other day, I am training a couple of my friends and my sister to help them get healthy and in shape. I wasn’t sure how it was going to go at first, but I love it!

The workouts look a bit like this:

  • Speed work on the track
  • Hills/Stairs
  • Weight lifting
  • Tabata
  • Circuit training
  • Insanity
  • At least one rest day

And the nutrition aspect:

  • Protein, protein, protein!
  • Don’t eat low-fat or non-fat foods
  • Go for whole foods as much as possible
  • Whole grains
  • Always eat breakfast

It’s a pretty basic nutrition plan but basic is sometimes best. Over this past year and a half in recovery, I have learned so much about health. I used to think I ate healthy during my ED but the truth is, I wasn’t. Now I know how healthy fats, proteins, and carbs are for your body! It’s been fun sharing that with people and breaking down the myth that fat is bad for you.

It’s only just begun but I have really been enjoying helping my friends! It makes me think that maybe I want to do this as a career one day…

oh whole foods, how i love you

Today was a BIG day….a Whole Foods opened up near me. Exciting stuff right there! The closest Whole Foods is about 30 minutes away and it’s a major bummer. But not anymore! Not sure if that’s a good thing or bad thing…(bad because my wallet won’t be happy). Plus it’s on my way to work. Oops.

Luckily my best friend loves Whole Foods too so we made sure to get there when they opened their doors for the first time at 9am. When we got there about 15 minutes early, there was already a huge line! But I did see Lexi!

They were giving out free mini baguettes to the first 300 customers. A bit random, but I’ll take it.

When 9am hit, the doors opened and everybody rushed in to see the goods. Let’s just say it was magical. Madness, yes. But oh so magical. It’s big, has a great selection of products, and an amazing hot food bar! I’m in love guys.

My friend and I already have plans to get lunch there on Friday 🙂 Of course I didn’t leave the store empty handed. I got the sprouted chocolate cereal like I said but I also got some dark chocolate goji berries, a celebratory Botanical No. 7 kombucha, and a reusable bag.

Now if you don’t mind, I’ll be out selling an arm and a leg to continue my love of Whole Foods.
