A Pumpkin Sort of Day

So as I have mentioned, I absolutely, completely, without a doubt, am in love with pumpkin! I wish people ate it all year round because it is so darn good! I woke up this morning and had my Pumpkin “Souffle” Pancake (for the third day in a row), some blueberries, and homemade pita with pumpkin butter. Sadly, I used the last of the pumpkin butter 😦 But luckily my mom was going to Trader Joes so I could get more! The entire time I was eating breakfast, my dad was eyeball my “Souffle.” Finally I asked if he would want to try some. He liked it so much, he wanted me to make one! That, my friends, is a success of a recipe 🙂

So after breakfast, we headed off to church, then Costco, then Trader Joes, and then Ralphs. BREAKING NEWS: NONE OF THESE PLACES SOLD PUMPKIN BUTTER! I can usually rely on Trader Joes, but there was none! I searched every single aisle about five times, no joke. Finally, I had to call it quits and go home 😦 But then I had an idea! Why couldn’t I just make some pumpkin butter?? So I did 🙂 and it was delicious 🙂 Once again, I would love to post the recipe, but I don’t know how the whole copyright thing goes down. So if somebody would like to inform me, please leave a comment 🙂

After making the pumpkin butter, I made something not so pumpkin: the Caramel Corn, with sweet potatoes, that I made on New Years Eve. Now I have some for the whole week 😀

Now, back to pumpkin! For dessert, I made some Creamy Pumpkin Frozen Yogurt using some of the homemade pumpkin butter.

All in all, it was a good, pumpkin filled day 🙂 But sadly, tomorrow brings me back to reality with school 😦 Oh well, Christmas break had to come to an end sometime..right?

Pumpkin “Souffle” Pancake

I don’t have exact measurements yet for this recipe because I just made it on the fly but I will soon 🙂

Pumpkin “Souffle” Pancake Recipe:

  • 1 egg
  • 2 egg whites
  • canned pumpkin puree
  • a pinch or two baking powder
  • a splash of almond milk
  • cinnamon
  • pumpkin pie spice
  • cinnamon and sugar, for the top
  1. Beat together all the ingredients except for the cinnamon anad sugar for the top.
  2. Heat a pan over medium heat.
  3. Spray with cooking spray and pour egg mixture into the pan.
  4. Cover with a lid so it will become fully cooked.
  5. Once you can flip it, flip. (Beware: it is very delicate)
  6. Sprinkle cinnamon and sugar over the top. Cover with the lid again.
  7. Once the sugar has caramelized, take it off the heat and enjoy!

Soy Sauce ‘n Ginger Tofu

Soy Sauce ‘n Ginger Tofu Recipe:

  • about 3 oz extra firm tofu (or more/less depending on your hunger)
  • reduced sodium soy sauce
  • honey
  • ground ginger
  1. Cut tofu into strips. Place on a paper towel with another paper towel on top.
  2. Place a pan over the tofu with something heavy (like cans) to get all the moisture out.
  3. Meanwhile, in a plastic bag, place the soy sauce, honey, and ginger. Eyeball the amounts and taste check every once in awhile until you reach the right flavor for you.
  4. After about 20 minutes, put the tofu into the plastic bag.
  5. Let marinate for 10-15 minutes in the refrigerator.
  6. Heat a small pan over medium heat.
  7. Spray with olive oil once heated and add the tofu.
  8. Cook until browned.
  9. Enjoy over a bed of brown rice or quinoa or veggies 🙂

happy new year everybody! well technically on the west coast it will be 2011 in 30 minutes..but you get what i mean. so now i want to tell you all some of my new years resolutions:

  • stop picking at my nails and hair (it is a horrible habit!)
  • stop eating in front of the tv
  • drink more water
  • procrastinate less!

tomorrow marks the day of a brand new me! and i truly believe i can accomplish all of these 🙂

switching topics now…food!

breakfast: i had practice early today and woke up later than i hoped to so i had-

  • toast with pumpkin butter
  • a hard boiled egg white
  • 2 clementines

then after practice, we had weight training so i had a ‘toasted nuts n cranberry’ luna bar (one of my favorite)

lunch-

  • spinach salad (spinach, beets, tomatoes, red onion, avocado, kidney beans, lentils, light honey mustard dressing)
  • organic vanilla yogurt
  • blueberries

snacks: throughout the day i ate some cuties and blueberries. then i made some homemade pita! it was delicious! i’m not sure how the whole copy right thing is supposed to happen so i just won’t even put the recipe up

dinner-

dessert: homemade healthy caramel corn! that’s right people! healthy! once again, i’m not sure about copyright but i will say there was sweet potato in it. how much better can it be??
